These lemon cookies are so simple and so good, I thought I'd share the recipe with you. I made a pdf with the French translation but I can't seem to be able to upload it?

a recipe from Hugh Amano, published in the Chicago Sun Times on Wed. April 1st, 2009. adapted by [asm]

1 stick + 2 tbsp. butter, softened ( 125g )
1 cup sugar (125g.)
1 egg vanilla
2 cups flour (250g.)
1/2 teasp. baking powder
1/2 teasp. salt
juice and zest of 1 lemon

Cream butter and sugar together with an electric mixer until pale and fluffy. Beat in egg, then vanilla. In a seperate bowl, whisk together flour, baking powder and salt. Add in stages to butter mix until fully incorporated. Add lemon juice and zest and mix. Roll dough into 12-inch log and wrap in plastic. Chill in freezer for about an hour. Preheat oven to 375F (200C). Unwrap dough and slice into 1/4 in.discs. Place on ungreased baking sheets and bake for 12 to 14 minutes. Cool on rack.
